Mrs. Chbarbi's Chicken and Potato Tagine

Our April Clipper Community Recipe Collaboration highlights a recipe from our very own Food Service Coordinator, Magalie Chbarbi. Ms. Chbarbi made Falmouth her home 17 years ago travelling from Île de Ré, an Island off the Atlantic coast of France, and became a part of the Clipper Staff over six years ago.
Before laying roots here, Mrs. Chbarbi learned to make Chicken and Potato tagine from her children' s Moroccan grandmother during their many family visits to The Northern tip of Africa. This dish, named for its traditional cooking vessel, is popular all over Morocco with many versions featuring lamb, beef, chicken, fish and vegetables; a centerpiece for their family events and reunions in Morocco for the past 25 years. We are excited to bring this Chicken and Potato Tagine with peas and green olives to the hot lunch line on April 16th , giving us the opportunity to explore culture through cuisine for our Harvest of the Month.
With her global travels Ms. Chbarbi has had the opportunity to try an array of tastes and flavors. The most unusual thing Mrs. Chbarbi has eaten- tripe and sweetbreads- two delicacies NOT on the top of her must try list!
